Friday Features - Family Cabbage Salad Recipes

Today I'd like to post two family recipes for Cabbage Salad. My mother grew up with her mother making these recipes and my mom got her kids to eat cabbage with the same recipes.

The first one has a variation my mother made, she added raisins. The second one has a variation I made by adding the pineapple juice to the dressing. Like a lot of family recipes, there are no exact measurements.  I have used measurements here so I could post calorie counts, but you can adjust to taste.



Cabbage and Peanut Salad

1 bag shredded cabbage or about 6 cups
2 Tablespoons Mayonaise (I always use Best Foods/Helman's), more or less to taste.
1/2 cup dry roasted peanuts
Option: you can use peanuts and/or raisins.

Put cabbage into large bowl. Mix mayo into the cabbage covering well. If you plan to use all of the salad in one sitting you can mix in the peanuts and serve. If you plan to use only part of the salad and save the rest for the next day, sprinkle a tablespoon of peanuts on top of each serving. (If you mix in all the peanuts and save half the salad for the next day the peanuts will become soggy and lose their crunch. yuk.)

Cabbage and Pineapple Salad

1 bag shredded cabbage or about 6 cups
1-1/2 Tablespoons Mayonaise
1 8-ounce can crushed pineapple (I use Dole with 100% juice), juice reserved

Put cabbage into large bowl. Place mayo in small bowl. Drain pineapple juice into another small bowl. Stir pineapple juice into mayo a little at a time until the mayo is thinned but not too runny. Mix the mayo-pinapple juice into the cabbage coating well. Mix in the drained crushed pineapple.

With both of these recipes the mayo dressing is to taste. Start with a little and taste to see if you would like more.
